“I used to have a favourite style of wine, but the more I worked in wine, the more I realised I don’t. When you start looking at all the different types of wines you realise each has a different place; whether to accompany food or because it’s summer or depending on your feelings.”
Alexis comes from Chantilly near Paris and at the age of 19 moved to London to improve his English. His first job was at Le Pont de la Tour as waiter, but he was “very surprised” when he first became interested in wine, because neither of his parents drink alcohol. He very quickly discovered a passion for it, however, and rose through the ranks of the wine team at Pont.
In 2008 he moved back to Paris to work as sommelier at Les Ombres restaurant, but six months later returned to D&D to take up the position of assistant head sommelier at Bluebird.
In March 2010 Alexis was promoted to head sommelier at Quaglino’s and he joined Skylon as head sommelier in August 2011.
